Soup = Love
Jan. 6th, 2007 05:42 pmIn this case, I decided to "love myself" and make a big pot a soup with some of my favorite things. This means
stonebender won't be having any.
dbubley probably will. It won't have ALL my favorite things since I don't plan to put rice or pasta in it - it's a "be kind to my diabetes" soup. I don't know how it will turn out because I've never made it before.
Ingredients: 4 chick thighs, a leek, mushrooms, roma tomatoes, cabbage, one box of chicken broth and one box of vegetable broth, frozen peas, zucchini, green pepper, dried hot pepper, garlic powder, dried parsley, basil, salt, pepper and a bay leaf. Water to fill the pot. I've simmered everything, but the zucchini and peas together for about an hour. Now I've added those and will simmer for another 30 or so minutes. I plan to serve with a sprinkle of "cheese de fridge" (either Parmesan, Asiago or Romano) and chopped cilantro cuz everything goes better with cilantro.
Good bread would top it off, but I'm going with saltines because that officially makes it comfort food. That and I don't have any good bread at the moment.
